Ginger Honey is a wonderful sweet treat. You can add it to any tea or coffee, or use it for the tea itself. It is also a delicious drizzle for ice cream or any dessert. Ginger is known for calming nausea and upset stomachs. And warm honey water is often thought of as a sore throat soother. Add a splash of lemon to your drink as well and/or cinnamon, cayenne and have yet another home remedy for sore throats and cough. Ginger Honey is so simple to make. Give it a try!

- organic ginger
- organic honey
Instructions
Simply wash your ginger and thinly slice it into about 1/8 inch slices. You can leave the peel on or remove it before slicing. If you choose to remove it, use a spoon and gently scrape the peel away. It is quick and easy. Also, I like to use organic. That way I know there are no pesticides swimming around in my honey. 🙂
Place your ginger in the jar you wish to store it in. Add honey. The amount of ginger and honey you use is up to you depending on how much you want to make and how strong you wish it to be. In the picture above I used about an inch of ginger added to approximately 2 ounces of honey.
Seal the jar and let sit for about a week to infuse the ginger into the honey. If it starts to crystalize, no worries, honey often crystallizes and is still perfectly good. If you are making a warm tea or adding to coffee it will melt anyway. If you would like to use it as a drizzle simple heat it up a bit before using, but do not boil.
