Watergate Salad, also referred to as Pistachio Pudding, is a light, sweet treat that is simple to make. It literally takes minutes to prepare. The salad is a well known dessert and is especially good to cool off a hot summer night. I add coconut to my recipe for some extra oomph and yum.
Ingredients
- 1 – 3.4oz box instant pistachio pudding mix
- 1 – 8oz can crushed pineapple, with the juice
- 1 – 8oz tub cool whip, thawed
- 2 cups mini marshmallows, or as many as you like
- 1/2 cup shredded coconut, or more to taste
- 1 cup chopped pecans and/or pistachios
Directions
- Are you ready? It goes fast. Here goes… Dump it all in a bowl. Mix it up until well combined. Refrigerate. Serve. Enjoy! 😉
- Store in air tight container in the fridge for up to 3 days.
