Orange Chicken is a delicious, sweet Chinese chicken dish. You may know it from Panda Express. It is one of their most popular dishes. I love Panda Express’ version, but Panda Express is far from me right now. And, it is sometimes difficult to find a local Chinese restaurant that has this on the menu, so I searched for a recipe I could make at home. This is the one I came up with and added my veggies of choice. You can serve this with rice or noodles.

Ingredients
  • 2 lbs boneless chicken, chopped (Most recipes say to use thighs, but I use chicken breast or tenders since I don’t like dark meat.)
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup flour
  • 1 tbsp olive oil
  • veggies of choice, chopped
  • 1 1/2 tbsp ginger, minced
  • 2 tsp garlic, minced
  • 1/2 tsp crushed red pepper
  • 1 tbsp cornstarch
  • 2 tbsp rice wine
  • 1/4 cup orange juice, no pulp
  • 1 tsp sesame oil
  • 3 tbsp soy sauce
  • 10 tbsp sugar
  • 10 tbsp white vinegar
  • 1 orange, zested
Instructions
  1. Preheat oven to 400F.
  2. In a food processor, crush panko breadcrumbs until they are much smaller and fine.
  3. Place panko in a bowl.
  4. Beat 2 eggs in another bowl.
  5. Add flour to a third bowl.
  6. Dip chicken pieces into the flour, then the egg and lastly the panko breadcrumbs.
  7. Place on a greased baking sheet.
  8. Bake for 20-25 minutes.
  9. While chicken is baking, stir fry your veggies, if using, and make the rice/noodles according to package directions.
  10. Add oil to pan on medium heat. Add veggies and cook until crisp tender, about 3-4 minutes.
  11. Add crushed red pepper, garlic and ginger. Cook 1-2 minutes more.
  12. Add the rest of the ingredients and boil until sauce thickens.
  13. Remove from heat. Add chicken and toss.
  14. Serve with rice or noodles.
