So delicious! This broccoli cheddar soup is a knock off recipe from Panera’s famous soup. It is soo good and rivals Panera’s version extremely well. You can make this as chunky or as smooth as you like depending on your preference. This soup is creamy, thick and cheesy. I use Tillamook cheese for my soup because it melts so nicely, but the recipe just calls for cheddar so you can use whatever brand you like. It is a super easy recipe to make and quick. If you like broccoli cheddar soup you should definitely give this recipe a try. Serve with some fresh baked crusty French rolls for a very satisfying meal.

Ingredients
  • 1/4 cup unsalted butter
  • 1/2 cup onions, diced
  • 1 cup carrots, shredded
  • 2 1/2 – 3 cups broccoli, chopped
  • 1 1/2 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • pinch of crushed red pepper
  • 2 cups cheddar cheese, shredded
Instructions
  • In a large pot on medium heat melt butter and add onions, carrots and broccoli. Sauté until soft, about 5 minutes.
  • Slowly add broth, milk and cream.
  • Sprinkle flour over top, whisking to break up any clumps while adding.
  • Add salt, pepper and red pepper.
  • Cook over medium heat until thickened about 10-15 minutes.
  • Add cheese and stir until melted and smooth.
  • If you want the soup smoother and less chunky blend with a hand mixer until desired consistency.
  • Serve warm and enjoy!!
