This is a delicious and warm Banana Bread Pudding recipe that I found from www.donnahay.com.au. I cut the recipe in half since I was cooking for two, so you could easily double this recipe. It is pretty simple to make and is a nice dessert for an evening meal. You can also add some whipped topping or ice cream for a creamy goodness topping. I hope you enjoy! 🙂
Ingredients
Makes 4 servings.
Pudding Ingredients
- 9 tbsp unsalted butter
- 1 medium ripe banana
- 1/2 cup brown sugar, packed
- 1 egg
- 3/4 cup all-purpose flour
- 3/4 tsp baking powder
Butterscotch Sauce Ingredients
- 4 tbsp unsalted butter, chopped
- 3/4 cup brown sugar, packed
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350F.
- In a small (approximately 6-8 inch) iron skillet on medium heat melt 9 tbsp butter until golden brown and foamy.
- Remove from heat and let cool a bit.
- In a mixing bowl add cooled butter, egg, 1/2 cup brown sugar, and banana. Whisk until combined.
- Add flour and baking powder and mix until combined.
- Pour back into iron skillet that still has butter residue.
- Bake approximately 18-20 minutes or until brown and toothpick inserted in comes out clean. (This took me about 30 minutes in my oven, but it is a little slow to bake.)
- While pudding is baking make sauce.
- In medium sauce pan on medium heat add 4 tbsp butter and melt until golden brown and foamy.
- Add 3/4 cup brown sugar and heavy cream.
- Cook stirring until sugar melts and sauce comes to desired thickness.
- Pour over baked pudding.
- Serve warm.
