Blueberry Compote is so delicious and easy to make. It goes great on pancakes or waffles, as an ice cream topping, as a cake or doughnut filling, or just simply on toast. It is a blueberry lovers dream. Warm, slightly sweet blueberry heaven. It is simple to make so give it a try.
Ingredients
- 2 cups blueberries, frozen or fresh
- 1/4 cup sugar
- 3 tbsp water
- 2 tsp lemon juice
Instructions
- In a heavy bottom sauce pan over medium heat add 1 cup blueberries, water, sugar and lemon juice.
- Cook for about 10 minutes, stirring occasionally. Turn the heat down a bit if it starts to stick to the bottom.
- Add the other cup of blueberries.
- Cook for about 8 more minutes, stirring.
- Remove from heat. Serve while warm.
