An oldy but goody, this Cinnamon Raisin Bread recipe is great for making just one loaf of this yummy bread. I don’t really care for raisins, so if I were just making it for me I would leave them out, but my husband likes them and I was making this one for him. The original recipe is good, but I think it needs more…more cinnamon sugar goodness and more swirls. I have adjusted the original recipe I found to add more. 😛 I hope you like it.

Ingredients
  • 1 tbsp active dry yeast
  • 1 cup warm water, about 110-115F
  • 1/8 cup cooking oil
  • 1 tsp salt
  • 3/4 cup sugar, divided
  • 1 egg
  • 3 cups all-purpose flour
  • 1 cup raisins
  • 3 tsp cinnamon
Directions
  • In a stand mixer dissolve the yeast and 1/4 cup sugar in the warm water.
  • Add oil, salt, egg and 2 cups of the flour. Mix together using dough hook. Add more flour if needed to form a soft dough that pulls away from the sides of the bowl when mixing.
  • Continue to knead with the dough hook for about 5 minutes. You can mix and knead the dough by hand if you wish. If kneading by hand, knead for about 5 minutes as well.
  • Place dough in an oiled bowl, turning once to get the oil on the top of the dough. Cover and let rise in a warm place until doubled, about 1 hour. It can be a good idea to preheat your oven to 170F, then turn it off and place the dough in the oven with the door shut.
  • Once it has risen, punch the dough down and turn out onto a lightly floured surface.
  • Knead the raisins into the dough.
  • Roll the dough out into 20 x 9 inch rectangle. Brush with a little oil.
  • Combine cinnamon and remaining sugar together. Set aside about 3 tbsps of the cinnamon sugar mixture for later. Sprinkle the remaining onto the dough leaving a 1/2 inch border around the edges of the dough.
  • Tightly roll up the dough, jelly-roll style, starting with the short edge of the dough.
  • Place the dough seam side down in a greased 9 x 5 inch loaf pan. Cover and let rise until it is about 1-2 inches above the rim, using the method above, about 20 minutes – 1 hour.

  • Remove the risen dough from the oven if using if for that.
  • Preheat oven to 375F.
  • Brush the top of the dough with oil or 2 tbsp melted butter. Sprinkle remaining cinnamon sugar mix on top evenly. (The cinnamon sugar on top can be omitted, but I think it will make a slight sweet crunch of yumminess on top. )
  • Bake for 30 minutes or until golden brown.
  • Remove from pan and cool on a wire rack.
