Beautiful and delicious crystallized ginger is such a treat. Crystallized Ginger can be added to baked items like fruit/nut breads, cookies, sprinkled on top of ice cream, or just anywhere you want a sweet and spicy heat. Ginger is full of health benefits as well. So, you definitely want to have this on hand. It is so super easy to make, it just takes a little time. Also, by making this crystallized ginger you are also making another tasty treat, ginger syrup. Ginger Syrup is delicious poured over desserts and added to coffee or tea. It does not disappoint. So, this super easy recipe is actually two recipes in one. 😉
Ingredients
- 8 ounces organic ginger
- 2 cups sugar
- 2 cups water
Directions
- Peel your ginger using a spoon to scrape away the thin peel. Slice into about 1/8 slices. (Side note: I often buy ginger and put it in the freezer until I am ready to use it. It will thaw while you are peeling it.)
- In heavy bottomed saucepan boil water and 1 1/2 cups sugar to boil.
- Add ginger.
- Reduce heat to medium and boil for about 30 minutes or until the ginger is tender. Do not boil too hard and only until ginger is tender. This may not take as long as 30 minutes. You just have to keep an eye on it. If you overdo this step you will start getting caramelization and it will be ruined.
- Using a slotted spoon dip out the ginger onto a wire rack or cutting board. The liquid remaining is your ginger syrup. Store syrup in air tight container and keep in fridge.
- Allow ginger to dry completely. (This will take a while, especially if you used a cutting board. You may need to rearrange ginger out of the puddles to help it dry quicker.)
- Once ginger is dry to the touch place in a bowl with remaining 1/2 cup sugar and toss.
- Voila! You are done! Store in air tight container.
