Dark chocolate truffles…one of life’s pure pleasures. Chocolate truffles are delicious, lightly sweet, easy to make and extremely versatile. You can add a variety of toppings or include various flavor extracts. Sometimes it is also nice to tuck a little surprise in the center. I am thinking cherries, nuts or whatever you wish. I am providing the simple recipe here and from there you can be a purist and stick to just chocolate or let your imagination flow and take your taste buds on an adventure. 🙂

Ingredients:

Makes approximately 34 balls.
  • 1 cup heavy cream
  • 2 cups (500g) 70% dark chocolate, chopped
  • good quality dutch cocoa

Directions:

  1. In a heatproof bowl set over a saucepan of simmering water (do not allow bowl to touch water) place the cream and chocolate. Stir until smooth and glossy. (If adding flavors do that at this point and stir well.) Cover and chill for at least 5 hours to overnight to allow chocolate to set.
  2. Roll approximately 1 tablespoon of chocolate mix into balls. (If you want something yummy in the center add that now and form your ball around it.) Place on a parchment or wax paper lined tray.
  3. Refrigerate 30 minutes to allow to reset.
  4. Dust with toppings if not using cocoa and store in air tight container. Refrigerate until ready to serve. (If using cocoa as your topping it is best to dust just before serving, otherwise, your cocoa will absorb into the truffle and will not be as pretty.)
