One of the most delicious, to me, breakfast recipes I make. I love Italian. I love marinara. So this is fantastic for me when I can’t get anyone else to eat Italian with me for a while and I am craving some sauce. The eggs give protein and make it hearty. It is simple to make and comes together fairly quickly. Serve with garlic toast for added yum!
Ingredients
Servings: 1
- 8 tbsp marinara sauce of choice
- 2 large eggs
- 2-3 tbsp milk, half & half, or heavy cream
- salt, pepper and basil to taste
- grated parmesan, how ever much you want
- grated mozzarella, how ever much you want
Instructions
- Preheat oven to 400F.
- In a small shallow oven safe dish, maybe 6×6 size, place marinara sauce.
- Crack your eggs on top of the sauce.
- Pour milk around the outside of the eggs.
- Sprinkle with salt, pepper and basil.
- Top with cheeses.
- Sprinkle more basil on top. (I LOVE BASIL!)
- Bake for about15 minutes. I like my eggs to be done, but I think you are actually supposed to have them a little runny. Either way is good.
- You may need to broil it for a minute or two to get your cheese browned slightly.
- Serve warm with toast.
