In my opinion this Hawaiian Banana Bread is better than your basic banana bread. Here’s why… there is only one banana in this bread and it contains coconut. The usual banana bread has about 3 bananas which gives a strong banana flavor, this is great if that’s what you are craving. However, this bread uses one banana and pineapple, not overdone pineapple, but just the right amount to help with the moisture and sweetness. Also, coconut….coconut is a wonderful addition. It adds a bit of chewy to your bread and a hint, I say a hint of flavor. All in all this is a winner. I think I prefer it over traditional banana bread. This recipe does not contain nuts, but by all means, if you like nuts, add them. Why not? And I am talking, pecans, walnuts, pistachios, macadamia, whichever makes you happy. 😉 Enjoy!
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 banana, ripe
- 8 ounces crushed pineapple, with juice
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4-1/2 cup coconut, shredded
- 1/2 cup chopped nuts, your choice (optional)
Directions
- Preheat oven to 350F and grease loaf pan.
- In a stand mixer cream butter and sugar together until light and fluffy.
- Add eggs, one at a time, mixing between each one until combined.
- Add banana in chunks or mashed, and pineapple. Mix until combined.
- In a separate bowl sift flour, powder, soda and salt together.
- Add flour mix to wet ingredients. Mix until combined.
- Stir in coconut and nuts (if using).
- Pour mixture into prepared pan.
- Bake for 60 minutes or until toothpick comes out clean. NOTE: If the top gets brown before toothpick comes out clean you can tent aluminum foil over the top to keep it from getting too brown.
- Cool in pan 5 minutes.
- Finish cooling on wire rack.
