Sweet and spicy is a delicious combination and you will definitely find that with this delicious Hawaiian Glazed Chicken and Coconut Rice recipe. I found the original recipe on www.lecremedelacrumb.com which has lots of recipes and ideas that pairs well with this dish. I added a side of sautéed mixed veggies to go with my dinner to make a complete, yummy, healthy and delicious meal. A fabulous rice bowl with Hawaiian flare. You could also do fresh veggies like cucumbers, avocados, etc. Whatever your taste buds crave. Get creative and enjoy! 🙂
Ingredients
- 1 lb chicken breasts, tenderloins or thighs ( whichever you like best)
- 2 tbsp butter
- 2 tbsp honey
- 1 cup uncooked white rice
- 1 cup coconut milk
- 1 cup water
- 3 tsp sugar
- juice of 1 lime
- pineapple chunks, cilantro and lime wedges for garnish (optional, but highly recommended)
Glaze Ingredients
- 1/3 cup low sodium soy sauce
- 1/3 cup brown sugar
- 1 tbsp siracha
- 2 tsp minced garlic
- 2 tbsp cornstarch
- 4 tbsp water
Chicken Rub Ingredients
- 1 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/8 tsp black pepper
Directions
- Mix together rub ingredients and rub all over chicken.
- In a large skillet over medium high heat melt together butter and honey.
- Once butter is melted add the chicken to the pan. Brown 2-3 minutes on each side. Remove chicken to a plate. Chicken is not cooked through at this point.
- Add rice to the pan and stir in coconut milk, water, sugar and lime juice. Add chicken to the top of the rice. Cover and cook over medium low temp for approximately 20-25 minutes, until liquid is absorbed, rice is soft and chicken is cooked through.
- While rice is cooking prepare the glaze. In a medium sauce pan add soy sauce, brown sugar, siracha and garlic. Bring to a boil on medium heat. Stir together water and corn starch until starch is dissolved and add mixture to the sauce. Reduce heat to medium low and stir until desired thickness.
- Plate the chicken and rice and spoon glaze over chicken. Garnish with pineapple, cilantro and lime wedges. (I also make a side of stir fried veggies to go with this dish when I make it just so we have more veggies. Either way is delicious.)
