Who doesn’t love honey? I mean, really. It is impossible to not like honey. So, chewy soft honey cookies will have to be a favorite.

I just made these honey cookies today and they are special. They have a light flavor. Chewy and soft. Sooo easy to make. They will be sure to please. The recipe is so simple and easy it would be a good one to enlist the help of the littles in the process.

I couldn’t wait until they were cool to try them because warm soft and chewy cookies are one of life’s simple pleasures. Give them a try.

Ingredients
Yields: approximately 30
  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 1 egg
  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 1/4 cup honey
  • turbinado sugar, for rolling
Directions

In a stand mixer beat oil, sugar and honey together until combined.

Add vanilla and egg and mix until combined.

Add flour, salt and soda. Mix until combined.

Refrigerate dough 30 minutes.

Preheat oven to 350F.

Roll dough into balls of about 1 tablespoon size.

Roll in turbinado sugar.

Bake on stone or parchment paper for about 9-11 minutes, until they are your desired brownness. (I baked mine about 13 minutes, but every oven is a little different.)

Cool on pan for about 5 minutes.

Transfer to wire rack to finish cooling.
