Lemon Parmesan Orzo with Asparagus and Chicken is an easy, delicious, simple and tasty recipe. Great for a meal that comes together quickly. Ingredients
- 1 lb chicken breasts, boiled and shredded
- 1 cup dried orzo
- 1 lb asparagus
- 1 tsp salt
- 1/2 tsp black pepper
- 4 tbsp butter
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1/2 cup half & half
- 2/3 cup parmesan, grated
Instructions
- Boil chicken. Let cool. Shred.
- Cook orzo according to box directions.
- Preheat oven to 400F.
- Cut bottom 2 inches from washed asparagus. Place on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss. Roast for 8 minutes. Set aside and let cool. Cut into 1-2 inch pieces.
- In skillet on medium heat add butter and let melt.
- Add garlic and cook 1minute.
- Reduce heat to low and add lemon juice, cream and parmesan. Whisk until combined and simmer 1-2 minutes.
- Add orzo, asparagus and chicken to sauce. Toss until combined.
- Add salt and pepper to taste.
- Garnish with more grated parmesan cheese and serve.
