Lemon Parmesan Orzo with Asparagus and Chicken is an easy, delicious, simple and tasty recipe. Great for a meal that comes together quickly. Ingredients
  • 1 lb chicken breasts, boiled and shredded
  • 1 cup dried orzo
  • 1 lb asparagus
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1/2 cup half & half
  • 2/3 cup parmesan, grated
Instructions
  1. Boil chicken. Let cool. Shred.
  2. Cook orzo according to box directions.
  3. Preheat oven to 400F.
  4. Cut bottom 2 inches from washed asparagus. Place on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss. Roast for 8 minutes. Set aside and let cool. Cut into 1-2 inch pieces.
  5. In skillet on medium heat add butter and let melt.
  6. Add garlic and cook 1minute.
  7. Reduce heat to low and add lemon juice, cream and parmesan. Whisk until combined and simmer 1-2 minutes.
  8. Add orzo, asparagus and chicken to sauce. Toss until combined.
  9. Add salt and pepper to taste.
  10. Garnish with more grated parmesan cheese and serve.
