Orange Chicken is a delicious, sweet Chinese chicken dish. You may know it from Panda Express. It is one of their most popular dishes. I love Panda Express’ version, but Panda Express is far from me right now. And, it is sometimes difficult to find a local Chinese restaurant that has this on the menu, so I searched for a recipe I could make at home. This is the one I came up with and added my veggies of choice. You can serve this with rice or noodles.
Ingredients
- 2 lbs boneless chicken, chopped (Most recipes say to use thighs, but I use chicken breast or tenders since I don’t like dark meat.)
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup flour
- 1 tbsp olive oil
- veggies of choice, chopped
- 1 1/2 tbsp ginger, minced

- In a food processor, crush panko breadcrumbs until they are much smaller and fine.
- Place panko in a bowl.
- Beat 2 eggs in another bowl.
- Add flour to a third bowl.
- Dip chicken pieces into the flour, then the egg and lastly the panko breadcrumbs.
