Polenta Fries are a neat little finger food, side dish or appetizer. Dip them in your favorite dip or sauce and voila, easy peasy addition to your meal. I used quick and easy ranch dressing here, but I am also thinking a balsamic glaze drizzled on top with grated parmesan, a herby Greek yogurt dip, or a creamy Cajun sauce of some kind. Be creative. This makes a neat little addition to your food gathering.

Ingredients
  • Polenta, (I bought the premade, ready to use kind in a tube.)
  • 1/2 cup panko bread crumbs
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • salt & pepper
  • spray bottle with olive oil
Instructions
  • Preheat oven to 425F.
  • Spray pan with olive oil. I used a stone.
  • Cut polenta into desired shape. I wanted a fry shape.
  • Put panko bread crumbs in a ziploc bag. Crush them with the bottom of a glass until they are fine.
  • Add the other dry ingredients. Shake together.
  • Spritz olive oil on your polenta fries.
  • Toss them in the bag with the bread crumbs mix.
  • Lay out on your pan and spritz with olive oil.
  • Bake for 45 minutes, turning them over half way through.
  • Serve with your toppings of choice or dip.
  • Enjoy!
